What's Cooking -- Cookout Chili
I make this chili from cookout leftovers. It is so easy and delicious! The smoky flavor really makes this chili a winner. You could also chop up your leftover hamburgers and hot dogs and freeze them. Pull them out in the middle of winter and make up a batch of this chili when you haven't had anything grilled in a while...yummm!
Makes 6 servings.
You'll need...
3 or 4 grilled hamburgers, chopped into 1/2 inch chunks
4 or 5 grilled hot dogs, same
1 onion, chopped
2 cloves of garlic, chopped
olive oil
28 oz can of diced tomatoes
6 oz can of tomato paste
15 oz can of black beans, drained and rinsed
10 oz box of frozen corn
16 oz (give or take) of beef broth
2 T chili powder
1 t ground cumin
Drizzle some olive oil in the bottom of a large pot and heat. Put the chopped garlic in the heated oil and saute for 30 seconds then add the onions. Saute for 5 minutes. Add the meat, tomatoes and juice, tomato paste, beans, and corn. Mix well. Add beef broth to desired thickness. Mix in seasonings and allow the chili to simmer for 30 - 45 minutes. Serve with a dollop of sour cream and chopped green onions.
