What's Cooking -- Bonnie's Cornbread
My friend, Bonnie, makes the BEST cornbread. When I asked her for the recipe she just smiled and said that there's LOTS of butter. Since I wasn't able to weasel the recipe out of her, I decided to try to replicate it. I think I have come pretty close. It sure disappears fast enough!
You'll need...
9 x 13 baking pan
non-stick spray
2 1/2 c flour
1 1/2 c yellow cornmeal
1/2 c sugar
4 t baking powder
1 t salt
2 c milk
2 sticks melted butter
2 eggs
Preheat oven to 400 degrees. Combine dry ingredients in a large mixing bowl. In a separate bowl mix together the milk, melted butter, and eggs then add to the dry ingredients. Mix until just combined. Pour batter into greased baking pan and bake for 30 minutes. Serve warm.
