What's Cooking -- Chocolate Lava Cakes
This dessert is only for those who are serious about their chocolate. RICH doesn't even begin to describe it! HEAVENLY comes close. Make up a batch, give a few away, but keep the rest for yourself! Makes 12
Preheat oven to 400 degrees.
Thoroughly coat muffin tins with butter and dust with granulated sugar.
Melt 2 cups of semi-sweet chocolate chips using a double-boiler method. Fill a medium pan with 2 inches water in it. Bring the water to a boil and place a glass bowl on top of the pan. Place the chips in the bowl to gently melt the chocolate. Be careful of the steam escaping around the bowl.
Using a hand-mixer, cream together 1 stick of butter (room temp) and 2/3 cup of sugar. Add six eggs, one at a time, beating well after each egg. Put mixer aside. With a spoon mix in 2/3 cup of flour and 1/2 t of salt. Mix until just combined. Add the melted chocolate and stir gently until combined. Divide the batter among the 12 muffin tins.
Bake for 10 minutes ONLY. Remove tin from the oven and allow to sit for another 10 minutes. Carefully remove each cake by sliding two forks down the sides of the cake and lifting. These are best if served right away. If the cakes have cooled before serving you can microwave the individual cakes for 13 seconds to melt the center.
If you're a serious chocoholic you'll take your cake plain. If you're a little wimpy about your chocolate, then you may want to serve with whipped cream or ice cream.
